Fish Filets in Hot Chili Oil
Sichuan boiled fish is usually made with a whole fish––often snakehead, carp or catfish. Using fish fillets doesn’t make this dish any less authentic, but it is certainly much easier. We boil everything, and then hot oil sizzles over the dish in a heatproof bowl. The real key is in the marinade.
Peking duck is a dish that originated in Beijing and is said to date back more than 700 years, to the Yuan Dynasty. Traditional-style comes with pancake, hoisin, and three to four pieces of duck meat (and skin), as well as watermelon radishes, cucumber, and scallion slices.
Boiled Pork with Mashed Garlic
Classic Sichuan dish. This is one of the most popular and delicious appetizers. Just a plain cooked pork belly with delicious spicy garlic sauce. It is surprisingly easy to make, cook a piece of nice pork belly, slice it into thin slices. Mix spicy and garlic sauce, drizzle on top of the meat.
